Mango Lassi
Ripe mango blended with whole-milk yogurt, a little sugar and cardamom into a thick pourable drink. The mango does most of the sweetening, so use fruit that is soft and fragrant.

Cut the mango away from the flat pit, score the flesh in a grid, and scoop the cubes into a blender. Very ripe fruit gives the best texture; fibrous mango will leave threads.

Add the yogurt, milk, sugar and cardamom.

Blend on high for 60 seconds, until completely smooth with no fruit specks and a pale orange foam on top.

Taste and add sugar only if the mango was underripe. Pour into 4 glasses and serve cold.
