German Baked Apple Pancake

A thin eggy batter poured over butter-softened apples and baked in a hot skillet until the edges climb the sides and set crisp. Custardy in the middle, dusted with confectioners' sugar.

    Whisk the eggs, milk, flour, granulated sugar, salt, and vanilla in a bowl until completely smooth with no lumps. Let the batter stand at room temperature for 20 minutes so the flour hydrates.

    Put a 10-inch ovenproof skillet on a rack in the middle of the oven and heat the oven to 425°F.

    Carefully remove the hot skillet. Add the butter and swirl until it melts and foams, then add the apple slices in an even layer and sprinkle with the brown sugar and cinnamon.

    Return the skillet to the oven for 8 minutes, until the apples soften and the sugar bubbles.

    Whisk the batter once more and pour it evenly over the hot apples. Bake 17 to 20 minutes without opening the oven, until the edges have puffed up the sides of the pan and are deep brown and the center is set but still soft.

    Dust with the confectioners' sugar and cut into wedges. It deflates within a minute of leaving the oven, so serve it straight away.
