Brigadeiros
Brazilian party candies of condensed milk and cocoa cooked down in one pan until the mixture pulls from the bottom, then cooled, rolled into balls, and coated in chocolate sprinkles.
- 1
Combine the condensed milk, cocoa, butter, and salt in a small heavy saucepan over medium-low heat, whisking until smooth.
- 2
Cook 10 to 12 minutes, stirring constantly with a silicone spatula and scraping the bottom and corners. It is ready when you can drag the spatula across the pan and the trail holds for a second before closing.
- 3
Scrape onto a buttered plate, spread to about 1/2 inch thick, and cool at room temperature 1 hour, until firm and no longer warm.
- 4
Butter your hands lightly and roll heaped teaspoons of the mixture into 1-inch balls, about 20 in all.
- 5
Roll each ball in the sprinkles to coat completely and set in small paper cups.
